You have nooo idea how delicious this is. Out-of-this-world! Not the prettiest dish I’ve ever made, but the flavors are undeniably there. It’s spicy, but not overpowering so, cheesy, meaty, and the rice gives a nice different texture, just awesome! I had a bite and decided that it was The Best-Most Flavorful dish I’ve had in a little while. It’s extremely affordable to make, it takes no time and it’s pretty healthy,so what’s stopping you! You need to make it tonight! And according to caloriecount.about.com it has only 341 calories per serving! It doesn’t get much better than this :)

Spanish Rice Bake

Servings: 6

Calories: 341 per serving

Ingredients:

  • 1 pound ground turkey
  • 1 garlic clove, minced
  • 2 cup finely chopped onion
  • 1/2 red bell pepper (chopped)
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup water
  • 3/4 cup uncooked long grain rice
  • 1/2 cup chile sauce
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1/2 teaspoon Worcestershire sauce
  • 1 pinch ground black pepper
  • 1/2 cup shredded Cheddar cheese

Directions: In a large saucepan over medium high heat, brown the ground turkey with the garlic until no longer pink. Add the onion, bell pepper, diced tomatoes, water, rice, chile sauce, salt, pepper, brown sugar and Worcestershire sauce and simmer (covered) for 30 mins. Transfer to a 9 x 13 baking dish, press down firmly and cover with cheese. Bake at 375F for 15mins or until the cheese is melted and golden brown. Cool down for 5 mins before enjoying :)

Mini Brownie Batter Chocolate Pancakes!

So this morning when I woke up all I wanted was pancakes! But not just any pancakes- I wanted good for you, fluffy chocolate pancakes and they were beyond amazing! And they had to be mini, isn’t food soo much cutter when it’s tiny and that way when you eat 3-4 pancakes you don’t feel as bad! And they are soo filling! VERY extremely easy to make and I’m sure you already have everything on hand :)  Pancakes for dinner anyone? You are going to love them!!! Serve them with a light maple syrup and you have an amazing breakfast that will keep you full for hours all for under 300 calories!

1/8 measuring cup makes the perfect mini pancakes :)

Mini Brownie Batter Chocolate Chip Pancakes

Servings: 2 (4 mini pancakes)

Calories: 186 (without chocolate chips)  256 (with chocolate chips)

Ingredients:

  • 1/2 cup all-purpose flour (you can also use gluten-free flour if you want)
  • 1/2 tsp baking powder
  • 2 tbsp Hershey’s Dark unsweetened cocoa powder (I ran out of the dark stuff so I used regular semi-sweet cocoa powder)
  • 2 tbsp stevia (or sugar)
  • pinch of salt
  • 3 tbsp unsweetened applesauce
  • 2 tsp vanilla extract
  • 11 tbsp skim milk
  • 1/4 cup dark chocolate chips, optional

Directions: In a medium bowl combine all the dry ingredients. In a measuring cup combine all the wet ingredients. Now pour the wet ingredient into the dry and stir to combine. Don’t overbeat it! The batter should be a little lumpy but all the dry ingredients should be saturated. Heat a  pan or griddle on medium high heat and spray with cooking spray. Pour some batter on the pan (about 1/8 cup) sprinkle with some chocolate chips and cook until perfectly set. Flip and cook that side for about 1-2 mins. Repeat with the remaining batter. Serve with syrup! Yum!

Honey-Berry Yogurt Parfait

I’m soo loving this right now. Simple yet elegant and sooo delicious!

Ok so just dropped off hubby at the airport. He is going to be gone till Friday so that means I get to eat all the fruit I want :)  So basically to get in awesome shape I’ll living off mostly fruit for the next couple of days but don’t worry it will still taste ahhmazing! So this morning since I’m about to go to the gym after this and to start my fruit-feast I decided to go with something light yet sooo good! Simplicity at its best! And presentation wise is pretty impressive. So forget about the french toast and make this for breakfast, you will love it and your body will thank you for it :)   I do have a confession to make, the only way I can eat strawberries is drizzled with honey, I think it’s a match made in heaven :)

Here is the simple recipe:

Honey-Berry Yogurt Parfait

Servings: 1

Calories: 229

Ingredients:

  • 1/2 cup nonfat plain yogurt
  • 1 1/2 tbsp honey (divided use)
  • 1 tbsp honey granola
  • 3 strawberries (cut tops off and then cut in half)
  • a small handful of blueberries

Directions:

In a parfait glass or a bowl, mix yogurt with 1 tbsp honey, top with granola. Spread out blueberries and strawberries on top and drizzle with 1/2 tbsp honey.

That’s it!!! How easy was that! Now go and make this and let’s go to the gym :)
